In 1863, my great, great, great grandfather Merritt Penwell travelled to Virginia City, Montana in the height of the gold rush and started a bakery. He provided bread for the miners of this wild west town while doing a fair amount of prospecting himself. He then moved northwest of Bozeman near the Bridger Ridge in 1865 to build and operate the Union Flour Mill, the 2nd existing flour mill in the Montana Territory, and farmed his own wheat.
I became interested in breadmaking while living in a small apartment in Brooklyn, New York. It was there where I created my Special Starter from scratch (it is the same levain strain I use to this day) and became versed in the art of sourdough and the methods of extending fermentation and baking the loaf dark to enhance flavor. After moving to Missoula in 2019, I was delightfully surprised to learn of my Montana breadmaking heritage and am happy to continue its legacy as a cottage baker.
